Ingredients:
- 1 cup of semolina (also known as rava or sooji)
- 2 cups of water
- 1 tablespoon of ghee or oil
- 1 teaspoon of mustard seeds
- 1 teaspoon of cumin seeds
- 1/2 teaspoon of finely grated ginger
- 1 medium onion, finely chopped
- 1 small carrot, finely sliced
- 1/4 cup of green peas
- 1 small tomato, finely chopped
- 2 to 3 coarsely chopped green chilies (adjust based on your spice preference)
- A generous handful of finely chopped coriander leaves
- Salt to taste
- Fresh lemon juice (optional)
Instructions:
- Heat a skillet over low to medium heat and dry roast the semolina until it turns a lovely light golden brown. Stir it often to prevent it from burning. Once it’s done, set it aside.
- In the same skillet, heat up the ghee or oil over medium heat. Once it’s hot, add the mustard seeds and enjoy the popping sound! Next, toss in the grated ginger and cumin seeds. Let them sizzle away until they release their wonderful aroma.
- Now, add in the green chilies and sliced onions. Cook them until the onions turn translucent and look kind of glassy.
- Time to add in the green peas and sliced carrots. Let them simmer away for about 2 to 3 minutes until they start to soften up nicely.
- Add the diced tomatoes and cook them until they’re tender and juicy.
- Pour in the 2 cups of water and bring it to a nice, rolling boil.
- Once it’s boiling, reduce the heat a bit and slowly add in the roasted semolina, stirring constantly to prevent any lumps from forming.
- Cook the mixture for about 2 to 3 minutes until it thickens up and the semolina is fully cooked. Keep stirring to make sure it doesn’t stick to the bottom of the pan.
- Season with salt according to your taste and stir in the chopped coriander leaves for that fresh burst of flavor.
- For an extra zing, squeeze some fresh lemon juice over the top if you like.
- Serve your delicious and nutritious Vegetable Upma while it’s piping hot!
